Having been part of Portland’s food scene for five years through cycling opportunities and Bon Appétit’s annual FEAST event, Cosentino feels that the city is one of the most authentic food destinations in the country, which made the decision to bring their next project to Portland all the more organic.
Jackrabbit features an extensive raw bar, gin-centric cocktail program, house-cured meats and dishes highlighting the area’s rich ingredient sourcing. Embodying Portland’s spirit of conviviality, we feature large-format signature plates spotlighting local meats.
The restaurant’s interior designed by PUNCH will draw inspiration from Portland’s rich history and highlight sustainable materials in a contemporary setting. This was further developed by keeping to our holistic approach to simplicity, authenticity and craft.
